If you’re like me, your past experience with Carlsbad might have resembled a family road trip to Legoland where you spent all day walking around a theme park, getting on rides and singing “Everything is Awesome” for the millionth time. Your reward as a parent for enduring such a day, was to grab a slice and a craft beer (or two) at Pizza Port before heading back to LA, only to do it all over again in a couple months. But what if the next time you got away to Carlsbad, you made it a spa day at a Forbes Five-Star resort that’s equipped with a world-class golf course, kids club to keep the little ones busy, and some of the best food and drink around. That’s what a stay at Park Hyatt Aviara looks like.

Park Hyatt Aviara Resort is a luxurious hotel situated atop a high ridge on the shore of Batiquitos Lagoon which is a beautiful wildlife sanctuary in Carlsbad overlooking the Pacific Ocean. The Forbes Five-Star resort also boasts the ultimate luxury distinction with its AAA Five Diamond award and is always on numerous “best of” and “top resorts” lists. The rooms are spacious and well-appointed with all the amenities you would need for a comfortable stay like jetted tubs, in-room illy espresso machines, and a very comfortable bed to lull you to sleep.

The dining options at Park Hyatt Aviara are well above what you would expect from a hotel. The award-winning Vivace restaurant, is the perfect special-occasion dining destination that offers innovative Italian cuisine in an elegant yet contemporary environment. Grab a table near the warm glow of the fireplace and enjoy a spectacular meal complete with a stellar wine list. 


For a more causal bite during the day, Argyle Steakhouse, located at the golf course, offers a great Happy Hour. Of course, craft cocktails, beer and wine will be on your radar, but you must order "The Burger." This masterpiece is made of a six ounce grass fed beef patty topped with arugula, garlic aioli, onion, applewood-smoked bacon/red wine compote, smokey Oregon blue and gruyere cheese on a buttery soft bun. It’s one of the best burgers you’ll ever have.

Wood fire grilled octopus with sweet pepper crema, marcona almonds, olive and calabrese chili oil. 

Goat cheese ravioli, tomato fonduta, bloomsdale spinach, eggplant agrodolce. 

Porcini crusted New York steak, onion crema, delfina potatoes, Swiss chard, black truffle, and Foie Gras butter.

Fresh, made-to-order doughnuts with raspberry and dark chocolate sauce.

Pool days are a must at this resort. The main pool offers family fun complete with a cafe/grill to grab a bite to eat poolside. For a more secluded and peaceful experience, head over to the adult-only pool - it boasts a spectacular view from the hillside. If you brought your clubs, the highly acclaimed Aviara Golf Club is a perfect place to try out that new iron. Of course, relaxing at the spa is always a great idea, and Park Hyatt Aviara has one of the best in San Diego.
